Control of mycotoxins in the dairy sector

A standard procedure for quantitative risk assessment has been set-up that is applied in HACCP and risk assessment in the dairy sector.
The approach was used for example to evaluate the relevance of mycotoxins for the safety of milk and milk products. The behaviour of mycotoxins along the dairy chain from feed production, transfer via cattle to milk, effectiveness of processing and toxicological data were taken into account to estimate public health risks. Using models various scenarios were evaluated to identify the most efficient way to control mycotoxins in the dairy sector.
